The Basque Cheesecake, which originated in Spain, is baked until the outside darkens into a soft, caramelized exterior. When it cools, the result is velvety, rich, and creamy cheesecake with flavors reminiscent of vanilla crème brûlée.
Chef Marc’s Fall version takes his classic Basque Cheesecake and incorporates an earthy pumpkin puree in celebration of the season’s harvest. The cake is topped with a luxurious dark chocolate shell, decorated to look like a spider’s web.
