INTRODUCING CHEF MARC HEU'S SIGNATURE COLLECTION

Hmong Heirlooms

A Signature Dessert Collection

By Chef Marc Heu | Marc Heu Pâtisserie Paris

When I think of love, I think of home.

Not the kind of love that’s spoken, but the kind that’s grown—through soil, through seasons, through care.

In my mother’s garden in French Guiana, love grew wild—lemongrass, limes, and passionfruit perfuming the air with her quiet devotion.

I hated it. I hated the humidity, the mud, the never ending sun on my back.

Every summer, when the rich kids went to Tahiti or skiing in the Alps— I went back to the farm. At twelve years old, I was pulling weeds with my bare hands, hauling water from the murky river and pruning fruits too high to reach.

Then one day, my parents said,

“Whatever you grow, you can sell at the market. Whatever you earn—it’s yours to keep.”

Something changed.

I started planting with purpose, watching seeds turn into fruit.

It’s only now I realize—

Love is like farming. You tend to what you have, even when it’s hard. You give before you receive.

HLUB—meaning “love” in Hmong—is my offering to that lesson. A dessert shaped like our traditional Hmong elephant’s foot, the symbol of family. Love is the foundation of family. My parents, brothers and sisters are the roots that gave me strength to grow.

Each ingredient is a memory of my mother’s garden, a taste of the love that raised me.

Inside features a lemongrass white chocolate mousse, ladyfingers soaked in homemade passionfruit juice, my signature passionfruit confit.

HLUB is part of my Signature Dessert Series:

Hmong Heirlooms— a celebration of culture, memory, and craft.

Because love doesn’t grow by chance. It grows through care, patience, and faith—just like everything worth keeping.

This is my offering...

Our HEIRLOOMS rooted in culture, memory, and the belief that the future of French pastry can hold many voices.

This collection is for you, Minnesota.

This collection is for all of us.
